PINEAPPLE TOPPING | |
Zucchini 1 (46 oz.) can unsweetened pineapple juice 1/2 c. lemon juice 2 tsp. pineapple extract 2 c. sugar (may increase to 3 or 4 c.) Peel, remove seeds and grind zucchini and then strain to equal 1 gallon (may have some chunks). Add all ingredients and simmer 20 minutes. Put in jars and cook in hot water bath for 30 minutes. Use on cake, ice cream, in salads, in sweet and sour sauce, etc. A good way to use up that extra zucchini. |
