FLAX SEED MUFFINS 
1 1/2 c. flour
3/4 c. flax meal
3/4 c. oat bran
1 c. brown sugar
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1 1/2 c. shredded carrots
2 peeled shredded apples
1/2 c. raisins
1 c. chopped nuts
3/4 c. milk
2 beaten eggs
1 tsp. vanilla
2 tbsp. vegetable oil

Mix together flour, flax, oat bran, brown sugar, baking soda, powder, salt and cinnamon.

In a large bowl, stir in carrots, apples, raisins and nuts. Combine milk, eggs, vanilla and oil. Pour liquid ingredients into dry ingredients. Stir until ingredients are moistened. DO NOT OVERMIX. Fill muffin pans 3/4 full.

Bake at 350°F for 15 to 20 minutes.
