POTATO SOUP 
3/4 c. butter
1 sm onion, chopped
2 qts. water
1/2 box (14 oz.) instant mashed potato buds
3 tbsp. chicken soup base
3 potatoes, boiled and diced
Parsley flakes

In kettle, melt butter and lightly brown onions. Add boiling water and soup base. Stir in instant potatoes and let simmer. Add diced potatoes and parsley flakes. Let simmer. You may add chunks of Mozzarella cheese to soup also.
