SPINACH SALAD AT SR. LEONARD'S
PARTY
 
1/2 c. olive oil
6 slices bacon, cooked crisp
2 garlic cloves, minced
4 tbsp. wine vinegar
4 tbsp. lemon juice
2 tbsp. sugar
Salt & pepper
12 oz. fresh spinach, well washed & torn into bite size pieces
1/2 lb. mushrooms, sliced
4 or 5 thin slices of red onion
1/2 c. pecans or walnuts
1/2 c. grated Parmesan cheese

Heat the oil in a small skillet. Add the garlic. Saute for 3 minutes. Add bacon, crumbled, vinegar, lemon juice and sugar. Reduce heat and simmer for 5 minutes. Transfer to a bowl and cool completely. Season with salt and pepper to taste. Toss together the spinach, mushrooms, red onion, nuts and Parmesan cheese. Pour enough of the dressing over it to suit your taste. Serves 6.
