NEW ENGLAND TURKEY BAKE 
1/4 c. butter
1/4 c. flour
1 1/4 c. milk
1/2 tsp. salt
1/4 tsp. pepper
2 c. (8 oz.) shredded sharp cheddar cheese
2 c. diced, cooked turkey
10 oz. pkg. frozen peas & carrots
4 oz. canned mushrooms
2 c. hot mashed potatoes

Melt butter, add flour, stir until bubbly. Add milk, salt and pepper, stir constantly until thick and bubbly. Cook 1 minute more. Add 1 1/2 cups cheese, stirring until melted. Add turkey, peas, carrots and mushrooms. Pour into 4 (1 1/2 cup) individual casseroles; top with potatoes. Bake at 350 degrees for 25 minutes. Sprinkle with remaining cheese. Return to oven until cheese melts. Serves 4.
