CRANBERRY MOLD 
2 c. boiling water
6 oz. pkg. sugar free raspberry flavored gelatin
16 oz. can whole cranberry sauce
1 c. chopped celery
1/2 c. chopped nuts (optional)
1 tsp. grated orange rind
Salad greens

Pour boiling water onto gelatin until gelatin is dissolved. Stir in cranberry sauce. Refrigerate until slightly thickened. Stir in celery, nuts and orange rind. Pour into 5 cup mold. Refrigerate until firm. Unmold on salad greens.
