CRANBERRY RELISH MOLD | |
1 (3 oz.) pkg. lemon-flavored gelatin 1 (3 oz.) pkg. cherry-flavored gelatin 1/2 c. sugar 3 c. boiling water 1 tbsp. lemon juice 1 (8 3/4 oz.) can crushed pineapple 2 c. (1/2 lb.) fresh or frozen cranberries, rinsed & drained 1 sm. orange, quartered & seeded 1 c. diced celery 1/2 c. chopped walnuts Dissolve lemon and cherry gelatin and sugar in 3 cups boiling water. Add lemon juice and undrained crushed pineapple. Chill until partially set. Put cranberries and orange through grinder and fold ground mixture into gelatin. Fold in celery and nuts. Pour into 8 1/2 cup mold and chill until firm. Unmold on lettuce leaves and serve. Yield: 10 to 12 servings. |
