SAUERKRAUT 
2 tbsp. butter
1/2 c. onions
1 qt. sauerkraut
1 med. potato, grated
2 tbsp. brown sugar
Stock, boiling water or 1/4 c. dry wine
Caraway seed or celery seed

Melt butter and saute onions. Cook until clear. Add sauerkraut and cook for 5 minutes more. Peel and grate potato. Add to sauerkraut. Cover with stock or other liquid. Cook uncovered 30 minutes.
