SAUERKRAUT 
1 lg. onion, chopped
1 tbsp. butter
6 1/2 c. drained (not rinsed) sauerkraut
1 1/2 c. grated potato, raw
1 med. pared, cored apples, diced (raw)
1 carrot, grated (raw)
2 tsp. caraway seeds
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. dry white wine (cooking wine)

Saute onion in butter in large skillet until golden. Add sauerkraut, potato, apples, carrot, seasonings, and wine. Cook over medium heat 8-10 minutes.
