IOLENE PUSEY'S PEANUT BRITTLE 
1 c. raw Spanish peanuts
1 c. sugar
1/2 c. Karo syrup
Dash salt
1 tsp. vanilla
1 tbsp. butter
1 tsp. baking soda

Mix sugar, peanuts and syrup together. Microwave on HIGH for 8 minutes, add vanilla and butter. Continue cooking on HIGH 2 1/2 minutes. Mixture should be darkened. Add baking soda and stir quickly. Quickly pour out on a lightly greased cookie sheet or aluminum foil. Spread thin. Let cool. Break into pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
