ITALIAN CREAM CAKE | |
1 stick butter 1/2 c. shortening 2 c. sugar 5 egg yolks 1 tsp. baking soda 2 c. plain flour 1 c. buttermilk 1 tsp. vanilla 1 c. pecans 1 c. coconut 5 egg whites, beaten Cream butter, shortening and sugar. Add egg yolks. Sift soda and flour; add to mixture alternating with buttermilk. Stir in vanilla, nuts and coconut. Fold in beaten egg whites. Bake in three 9 inch pans coated with shortening and flour. Bake at 350 degrees for 20 minutes. ICING: 1 (8 oz.) cream cheese, room temperature 1/2 c. soft shortening 1 box powdered sugar 1 tsp. vanilla Mix all ingredients. If too thick, add small amount milk until spreading consistency is reached. |
