SWEET POTATO SOUFFLE 
3 c. mashed yams
1 c. raisins
1 c. sugar
1/2 tsp. salt
2 eggs
1/2 c. butter
1/2 c. milk
1/8 tsp. ginger
1/2 tsp. nutmeg
1 tsp. cinnamon
1/2 tsp. cloves
1 c. brown sugar
1/2 c. flour
Marshmallows
1 c. nuts; optional

Melt 1/4 cup butter and set aside. Blend yams, raisins, optional nuts, sugar, slat, eggs, 1/4 cup (unmelted) butter, milk, ginger, nutmeg, cinnamon, and cloves together. Put in 2 quart baking dish. Combine brown sugar, flour, and melted butter. Sprinkle on top of dish. Cook at 350 degrees for 20 minutes. Remove from oven. Cover top of casserole with whole marshmallows. Bake 10 more minutes.
