SWEET POTATO SOUFFLE 
6 med. sweet potatoes
1 c. sugar
1 stick butter
Pinch of salt
Raisins (if desired)
1/2 tsp. cinnamon or nutmeg
Miniature marshmallows

Boil sweet potatoes until soft. Remove peeling and put in bowl. Mash then beat with rotary beater (this will remove most strings as they will collect on beaters). Add sugar mixed with salt and spice. Add butter while potatoes are hot so it will melt. Add raisins. Put in buttered casserole and cook at 350 degrees for 30-40 minutes. Add marshmallows on top, if desired, and put back in oven to brown and melt.
