2 eggs 1 c. milk 1 c. sifted unbleached flour 1/2 tsp. salt Do not preheat oven. Beat eggs lightly. Add milk, flour and salt. Beat ONLY until smooth. Do not overbeat. Pour into greased custard cups or heavy muffin tins, filling each 1/3 full. Place in cold oven (on baking sheet for custard cups). Turn on heat set at 450 degrees. Bake for 25 minutes, then at 350 degrees for 15 minutes. Serve at once. |
