LOW FAT FETTUCCINE ALFREDO 
1 tbsp. olive oil
3/4 c. skim evaporated milk
1/3 c. freshly grated Parmesan cheese
1/4 c. sliced green onion
2 tbsp. snipped fresh basil or 1/2 tsp. dried basil
1/4 tsp. finely shredded lemon peel
1/4 tsp. garlic powder
1/8 tsp. pepper
Freshly grated Parmesan cheese

Cook pasta, drain immediately return to pan. Add olive oil, toss to coat. Add milk, cheese, onion, basil, lemon peel, garlic powder, pepper. Cook over medium high heat until bubbly, stirring constantly. Serve topped with fresh cheese and basil.
