KEY LIME PIE 
9 inch baked pie shell
2 - 2 1/4 c. canned condensed milk
3 - 4 egg yolks
3/4 plus 2 tbsp. lime juice
4 tsp. grated lime peel

Beat the egg yolks until light yellow in color. Blend in the condensed milk using a whisk. Gradually add the lime juice and grated peel, blending well (also with a whisk). The mixture will thicken with the addition of lime juice. Spoon mixture into cooled pie shell. preheat oven to 350 degrees for meringue.

MERINGUE:

3 - 4 egg whites, room temperature
1 tsp. lime juice
6 tbsp. sugar

Beat egg whites until frothy. Add 1 teaspoon of lemon juice and beat until whites hold their shape. Add sugar, 1 tablespoon at a time, until stiff. Mound on top of pie. Bake for 12 to 15 minutes. Chill for about 4 hours before serving.
