KEY LIME PIE | |
Serves 6. PIE SHELL: 1 1/4 c. graham cracker crumbs 1/4 c. sugar 1/3 c. melted butter 1/4 c. finely chopped almonds Combine ingredients and blend well. Line bottom and sides of a 9 inch pie plate. Bake 8 to 10 minutes at 375 degrees. FILLING: 1 can sweetened condensed milk (NOT evaporated milk) 3 egg yolks (save whites) 3/4 tsp. sugar 1/2 c. lime juice Place ingredients in bowl and mix on low speed until thoroughly blended. Pour into crust. Chill 4 hours before serving or freeze, then thaw 2 to 3 hours before serving. MERINGUE: 3 egg whites 1/2 tsp. vanilla 1/4 tsp. cream of tartar 6 tbsp. sugar Beat all ingredients together until stiff peaks form. Spread to touch all sides of pie crust. Bake 5 minutes at 375 degrees. |
