GROUND BEEF & CHEESE CASSEROLE | |
6 slices bacon, diced 1/2 c. chopped onions 3/4 c. water 1 c. corn muffin mix 1/2 c. grated cheddar cheese 1/2 c. milk 1 1/2 lb. lean ground beef 1 can cream of mushroom soup 1/2 c. all-purpose flour 1 egg, beaten Salt & pepper to taste Preheat oven to 375 degrees. In skillet, fry bacon until crisp. Remove from skillet and set aside. Pour off all but 2 tablespoons drippings. Add ground beef and onions to drippings in skillet. Cook, stirring with a fork to break up meat until browned. Add salt and pepper, water and soup. Mix to blend. Simmer 10 minutes, add reserved bacon. Mix to blend. Spoon into a 13 x 9 x 2 inch baking dish. Set aside. In medium bowl, combine remaining ingredients. Mix to blend. Spoon around edges of beef mixture in baking dish. Bake 20 to 25 minutes or until done. |
