GARLIC MARINATED MUSHROOMS 
1/2 c. white or red wine vinegar
1/4 c. olive oil
4 cloves garlic, crushed
3/4 tsp. salt
1/2 tsp. cracked black pepper
1 lb. fresh button mushrooms
1 tbsp. chopped mixed fresh herbs (basil, oregano, tarragon, etc.) or 1 tsp. mixed dried herbs
1 red pepper, cut into thin slices
1 sm. head Romaine lettuce (or substitute your favorite)
Sprig of fresh basil for garnish

Place mushrooms, herbs and red pepper strips in a non-aluminum bowl. Combine all other ingredients (except lettuce and garnish) in saucepan. Add 3/4 cup water. Bring to a boil. Reduce heat and simmer 10 minutes. Pour marinade over mushroom mixture. Cover and chill at least 2 hours or overnight. When ready to use, drain mushroom mixture. Place atop lettuce. Garnish with basil sprig.
