GARDEN SALAD WITH ALMONDS AND
ORANGES
 
1 head iceberg lettuce
1 head romaine lettuce
1 c. sliced almonds
1/4 c. sugar
6 green onion tops, thinly sliced
2 (11 oz.) cans mandarin oranges, chilled and drained

DRESSING:

1 c. vegetable oil
1/4 c. vinegar
1/4 c. sugar
1 tsp. salt
Dash black pepper
Dash red pepper
1 tbsp. parsley flakes

1. Wash and prepare lettuce. Tear into bite-sized pieces. Chill.

2. Combine almonds and sugar in a saucepan. Stir over medium heat until sugar melts and is browned. Cool caramelized almonds on a cookie sheet.

3. Combine all ingredients for dressing and chill.

4. When ready to serve, combine lettuce, green onions, almonds and oranges. Toss with desired amount of dressing. Serves 6-8.
