CANDIED ALMOND SALAD 
1/2 head lettuce, chopped
1 c. celery, chopped
2 green onions, chopped
1 c. drained mandarin oranges

CARAMELIZE:

2 tbsp. sugar
1/4 c. almonds

Toss first 4 ingredients. To caramelize cook at low to medium heat in heavy iron pan. Keep stirring, put on dish and break apart.

DRESSING:

2 tbsp. vinegar
2 tbsp. sugar
4 tbsp. oil
1/2 tsp. salt

Toss with dressing and almonds just before serving.
