ORIENTAL ALMOND COOKIES 
2 c. sifted enriched flour
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. butter
2/3 c. sugar
2/3 c. packed brown sugar
1/2 tsp. almond extract
1 egg, separated
2 tbsp. milk
1 tbsp. vinegar
1/2 c. chopped, toasted almonds
1/3 c. halved almonds

Sift flour, soda and salt. Cream butter, sugars and almond extract.

Beat in egg yolk, milk and vinegar. Blend in dry ingredients and chopped almonds.

Shape dough in 1 inch balls. Place 2 1/2 inches apart on cookie sheet. Flatten with glass.

Beat egg white slightly. Brush on cookies. Press almond in center. Bake at 375 degrees 10-12 minutes or until lightly browned. Cool on rack. 4 dozen.
