“CHICKEN AND BROCCOLI CASSEROLE” IS IN:

CHICKEN AND BROCCOLI CASSEROLE 
4 to 6 chicken breasts
1 to 2 (10 oz. ea.) pkgs. frozen broccoli
1 can cream of chicken soup
1 can cream of mushroom soup
1 tbsp. lemon juice
1/4 cup mayonnaise
1/3 cup butter
6 oz. grated cheese (any type)
bread crumbs to cover top of casserole

Cook chicken until tender. Cool. Take meat from bone and cube. Cook broccoli until done.

Heat together soups, lemon juice, mayonnaise and butter. Layer the chicken, broccoli and soup mixture in buttered casserole dish. Top with grated cheese and bread crumbs.

Bake at 350°F for 30 minutes.

I've made different versions of this recipe for about 40 years now. The recipe I have uses fresh asparagus instead of broccoli, but basically the same for everything else. You can add wine to it, dry vermouth -- I add the curry powder to it and a little grated onion into the sauce -- whatever you like this recipe is forgiving. I've got it in the oven now made with the broccoli and it's going over to some friends to be their dinner. Oh yeah, I did cook some basmati rice first and added it as a bottom layer -- when that sauce gets down to that and starts soaking in it's very tasty. This makes for great leftovers, too. Thanks for posting this! I hope folks give it a try.
