COTTAGE CHEESE PANCAKES 
1 c. cottage cheese
4 eggs
2 to 3 tbsp. sugar
1 c. milk
1 c. flour

Puree 1/2 cup cottage cheese, then add egg yolks, salt and sugar. Beat well and add milk alternately with flour. Add 1/2 cup additional cottage cheese. Fold in 4 egg whites, stiffly beaten. Grease heated griddle. Bake until golden brown on both sides. Serves 4.
