SEAFOOD CASSEROLE 
1 c. chopped celery
1/2 c. chopped onion
1 lg. chopped green pepper
1 sm. can tuna
8 oz. sm. cooked shrimp
8 oz. imitation crab
1 sm. can mushrooms
1 c. light mayonnaise
1 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
Salt & pepper
Dash of Tabasco sauce
3 c. cooked rice
Buttered bread crumbs

Line a 9 x 13 inch greased pan with cooked rice. Cook until thick butter, flour and milk. Saute celery, onion, salt and pepper in 1 tablespoon butter. Mix vegetables with white sauce and add tuna, shrimp and crab. Stir in mayonnaise and mushrooms. Pour mixture over rice. Sprinkle with buttered bread crumbs. Bake for 30 to 40 minutes at 375 degrees. This can be prepared a day ahead and baked the day of use.
