APRICOT CORNISH HENS 
2-3 cornish hens
2 tbsp. olive oil
1/2 c. chopped onion
1/2 c. diced celery
1 can apricots
1 tbsp. poultry seasoning
1/4 tsp. sage
Dash of salt
Dash pepper
4 tbsp. honey
1 box wild rice, prepared by instructions

Wash and pat hens dry. Saute onion and celery in oil until transparent. Add juice of apricots, poultry seasoning, salt, pepper and honey. Stirring in wooden spoon. Simmer 15 minutes. Place hens breast up in large baking dish, pour mixture over hens. Cover. Bake at 350 degrees for 45 minutes to 1 hour (until tender). Remove lid and brown hens.

Using an oval shaped dish put rice around outside edge, place birds in center placing the apricot halves on top of rice.
