APRICOT-GLAZED CORNISH HENS
(MICROWAVE)
 
3/4 cup apricot preserves
2 tbsp. orange juice
2 Rock Cornish hens, thawed
1/4 cup sliced green onions and tops
2 tbsp. butter
1 cup uncooked mixed wild and white rice
1 tbsp. minced parsley
Chicken broth

Mix apricot preserves and orange juice in small bowl. Remove giblets from thawed hens. Place hens breast side down in glass baking dish; microwave 15 minutes on high (approximate - see below). Turn hens breast side up for 15 more minutes.

Baste hens with apricot mixture every 5 minutes. Sauté green onions in butter about 2 minutes. Stir in rice; cook according to package directions, substituting chicken broth for water.

Stir parsley into rice. Spoon rice onto serving platter, arrange hens on rice.

Serves 2.

Microwaves differ in wattage and power. Adjust your cooking time accordingly. Use an instant read thermometer for best results; the game hens are cooked when they reach 157-162°F at the breast. They may be removed at 155°F and wrapped with foil for 15 minutes before serving.

Since microwave ovens vary in power, you may need to adjust your cooking time.
