STUFFED CORNISH HENS WITH ORANGE
HONEY SAUCE (MICROWAVE)
 
1 1/2 c. hot water
1 c. orange juice
1 (6 oz.) pkg. long grain and wild rice mix
4 slices bacon, cooked, crumbled
4 (1 lb. each) Cornish hens
1/2 c. orange juice concentrate
1/3 c. honey
1/4 to 1/2 tsp. browning sauce

Set power select at high. In 2 quart casserole dish, combine water, juice and rice. Heat covered, 5-6 minutes.

Set power select at medium-low. Heat covered, 20 minutes or until rice is tender. Stir in bacon. Stuff hens with rice mixture; with string, tie wings of body of hen and legs together to cover stuffing. Place hens in oblong baking dish.

Set power select at high. Heat covered with wax paper 28-30 minutes or until hens are tender, rearranging hens once. Meanwhile, combine remaining ingredients: brush hens every 10 minutes. Let stand covered 10 minutes before serving. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
