ROCK CORNISH HENS WITH ORANGE
SAUCE
 
4 oz. wild rice
1 sm. onion, minced
2 oz. fresh mushrooms, chopped
1 egg
3 tbsp. burgundy
4 hens

Preheat oven to 350 degrees. Cook rice. Mix with onions, mushrooms, egg and wine. Season to taste. Stuff hens and bake for 45 minutes. After hens are cooked, spoon on orange sauce. Remove hens to warm plate and serve with extra sauce. Serves 4.

ORANGE SAUCE:

6 oz. concentrated frozen orange juice
6 oz. water
1/4 c. cognac or sherry
1 tbsp. sugar
1/2 tsp. salt
1 orange, peeled and thinly sliced
1 tbsp. cornstarch

Mix all ingredients except cornstarch and simmer for 10 minutes. Add cornstarch moistened with water to thicken.
