BARBECUED CORNISH HENS MEXICANA 
2 Cornish hens
Salt & pepper
1/2 c. ketchup
1/2 c. tomato sauce
2 tsp. chili powder
1 tsp. paprika
1/2 tsp. cumin
1 tbsp. Worcestershire sauce
1/4 c. brown sugar
1/2 c. red wine vinegar

Season Cornish hens inside and out with salt and pepper to taste. Place Cornish hens in roasting pan. combine remaining ingredients and brush hens liberally with sauce. Roast at 325 degrees for 1 hour and 15 minutes basting twice during cooking time with remaining sauce. This recipe also works well on the grill.
