PEACH AMARETTO JAM 
4 c. mashed peaches
5 1/2 c. sugar
1/2 c. lemon juice
1 (2 oz.) pkg. powdered pectin
1/3 c. amaretto
1/4 tsp. butter

Finely grind peaches and put in 6 to 8 quart kettle. If short of fruit fill last cup with water to equal exact amount. Add lemon juice and pectin. Stir well. Place over heat and bring to a boil, stirring constantly. Add sugar, mix well. Continue stirring and bring to a full rolling boil (a boil that cannot be stirred down), add butter. Boil hard exactly 4 minutes. Remove from heat. Skim off foam. Stir in amaretto. Pour into 7 (8 ounce) glasses.

Tastes great but I don't see any instructions for processing the jars. I'm going to do 10 minutes but it would be nice to know what the pros do.
