OYSTER PIE 
1 1/2 tsp. chopped onions
2 c. milk
2 tbsp. butter
4 tbsp. flour
1/4 tsp. pepper
1/2 tsp. paprika
1 pt. drained oysters
1 c. cream or evaporated milk
1 1/2 c. diced cooked chicken
1 c. sauteed mushrooms
Pastry for 9-inch pie

Saute onions in 2 tablespoons melted butter in saucepan. Stir in flour and seasonings and heat for 3 minutes. Gradually stir milk into mixture, then stir in cream or evaporated milk. Heat to a low simmer, stirring continually. Blend cooked chicken and mushrooms into mixture.

Simmer oysters in remaining butter until edges curl, then add to sauce mixture. Prepare pastry for 9-inch double-crust pie. Pour filling into pie shell and cover with top crust. Cut vent holes in crust. Bake for 450 degrees for 10 minutes. Reduce to 400 degrees and bake 20 minutes more until pastry is brown.
