BROCCOLI PIE 
2 (10 oz.) pkgs. frozen chopped broccoli
3 c. (12 oz.) shredded cheddar cheese
2/3 c. onion, chopped
1 1/2 c. milk
3 eggs
3/4 c. buttermilk baking mix
3/4 tsp. salt
1/4 tsp. pepper

Heat oven to 400 degrees. Grease 10 x 1 1/2-inch pie plate. Rinse broccoli under running cold water to thaw; drain thoroughly. Mix broccoli, 2 cups of the cheese, and the onion in plate. Beat milk, eggs, baking mix, salt and pepper until smooth, 15 seconds in blender on HIGH or 1 minute with hand beater.

Pour into plate. Bake 25-35 minutes. Top with cheese and bake 1 to 2 minutes until melted. Let stand 5 minutes and garnish with tomato slices. Yield: 6 servings - 405 calories per serving.
