STIR FRY ORIENTAL CHICKEN | |
4 lg. boneless chicken breasts (cut into bitesize pieces) 1 tsp. lemon juice 1/2 tsp. minced garlic 1 tsp. Kikkoman soy sauce 1/4 c. cooking oil 1/4 c. chopped onions 1/4 c. chopped green pepper Add oil, lemon juice, garlic, soy sauce, onions and green pepper to a large iron skillet. Saute until onions and pepper are just tender. Add chicken. Increase heat and stir chicken quickly until it turns white on all sides. Check for doneness. Remove from heat. Add 1 additional teaspoon soy sauce. Cover and set aside. Serve over a hot bed of white rice along with hot tea and a side dish of small English peas topped with butter. Shrimp or beef can be substituted for chicken. |
