4 c. chopped apples
2 c. sugar
3 c. flour
2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. cinnamon
2 eggs
1 c. liquid vegetable oil
1 tsp. vanilla

Mix apples and sugar together. Let stand 1 hour, stirring occasionally. Sift together flour, baking soda, salt, nutmeg, and vanilla; mix in dry ingredients. Bake in a Bundt pan at 325 degrees for 1 hour.
