EASY CARAMEL ROLLS
2 c. biscuit mix
1/2 c. milk
2 tbsp. butter
1/2 c. firmly packed brown sugar, divided
1 tsp. ground cinnamon
1/4 c. butter, melted
1/2 c. chopped pecans

Combine biscuit mix and milk, stirring with a fork until blended. Turn dough out onto a lightly floured surface, and knead 4-5 times. Roll dough into a 15 x 9 inch rectangle, and spread with 2 tablespoons butter.

Combine 1/4 up brown sugar and cinnamon; sprinkle mixture over dough. Starting with long side, roll up jelly roll fashion. Pinch seam to seal (do not seal ends). Cut into 12 slices.

Combine remaining 1/4 cup brown sugar, melted butter, and pecans; divide mixture equally into well greased muffin pans. Place slices, cut side down, into muffin pans. Bake at 350 degrees for 20-25 minutes or until lightly browned. Remove from pans immediately. Yields 1 dozen.
