FRENCH RICE 
1/4 lb. butter
1/2 c. onion, chopped
1/2 c. bell pepper, finely chopped
1 c. rice (uncooked)
1 can beef broth
1 can water
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. almond extract

Preheat oven to 350°F. Sauté butter, onion and bell pepper, but do not brown. Add remaining ingredients. Mix well. Place in baking dish and bake for 45 minutes to 1 hour. This does not rise or swell up much.
