SPICY WALNUTS 
2 1/2 c. walnuts
1 c. sugar
1/2 c. water
1 tsp. cinnamon
1/2 tsp. salt
1 1/2 tsp. vanilla

Heat walnuts in 375 degrees oven for 5 minutes, stirring once. Butter sides of 2 quart saucepan. Combine sugar, water, cinnamon and salt. Heat and stir until sugar dissolves and mixture boils. Cook without stirring to soft ball stage (236 degrees). Remove from heat. Beat by hand 1 minute or until mixture just begins to get creamy. Add vanilla and warmed walnuts. Stir gently until nuts are well coated and mixture becomes creamy. Turn mixture out on butter platter, baking sheet or waxed paper. Separate at once using 2 forks.
