6 c. zucchini
1/2 c. onion, chopped
1 c. carrot, grated
1 pkg. chicken Stove Top stuffing
1 can cream of chicken soup
1 c. sour cream
1/2 stick butter, melted

Saute zucchini, onion, and carrot in butter. Drain and save butter. Mix soup and sour cream together. In bottom of casserole dish, put some of saved butter and Stove Top stuffing; then a layer of zucchini mixture. Top with soup and sour cream mixture. Keep layering until gone.

Bake at 350 degrees for 45 minutes.
