ZUCCHINI SALAD CASSEROLE 
3 med. zucchini squash, unpeeled and sliced
8 oz. Ricotta cheese
8 oz. Mozzarella cheese
16 oz. favorite spaghetti sauce

Layer 1/2 of the zucchini slices in bottom of a casserole dish, then cover with 1/2 of the Ricotta and 1/2 of the sauce. Add the remaining zucchini, Ricotta, and sauce in layers. Top with Mozzarella; season as you wish. Sprinkle with small amount of Parmesan cheese. Bake at 350 degrees for 45 minutes.
