BEEF AND NOODLE CASSEROLE | |
1 lb. lean ground chuck or round steak 1/2 lb. noodles, cooked 1 tbsp. butter 1 tbsp. salad oil 2 med. onions, chopped 1 tsp. salt 1/4 tsp. pepper 1/4 tsp. dried thyme 2 eggs, beaten 1 can condensed cream of mushroom soup 1/4 c. milk 3/4 c. grated cheddar cheese Heat butter and oil together in a heavy skillet and saute onions lightly. Break up meat in rather loose chunks. As it cooks add salt, pepper and thyme. When meat loses its color but is not brown, stir onions back in. In a good size casserole make layers of 1/3 noodles, 1/2 meat, 1/2 soup. Repeat layers with last 1/3 noodles as top layer. Mix beaten eggs with milk and pour over casserole. Top with the shredded cheese and bake at 350 degrees for 35-40 minutes. |
