CORNED BEEF SALAD 
1 can corned beef, shredded
2 (3 oz.) pkg. lemon Jello
1 tbsp. vinegar or lemon juice
1 c. Kraft or Miracle Whip dressing
1 1/2 c. finely cut celery
4 hard-boiled eggs, cut in pieces
2 tbsp. green pepper, cut fine
2 tbsp. minced onion

Can use just egg whites. Can use low-cholesterol mayonnaise.

Dissolve Jello in 3 1/2 cups boiling water, and cool. When slightly set, stir in salad dressing. Stir in other ingredients. Chill until firm. Cut into squares. Serves 8 generously.
