PUMPKIN BARS 
2 c. sugar
1 c. Wesson oil
4 eggs
2 c. pumpkin
1/2 tsp. salt
1 tsp. vanilla
2 tsp. cinnamon
2 tsp. baking soda
2 tsp. baking powder
2 c. flour
1 c. raisins (opt.)
1 c. nuts (opt.)

Mix oil, sugar, eggs, pumpkin, salt and vanilla. Add the blended dry ingredients. Stir well then mix with electric mixer until fluffy and smooth. Spread on a large greased and floured cookie sheet. Bake at 350 degrees for 20 to 25 minutes. Cool and frost with cream cheese frosting.

CREAM CHEESE FROSTING:

3 oz. cream cheese
3/4 stick butter
2 1/2 c. powdered sugar
2 tsp. milk
1 tsp. vanilla
Pinch of salt

Mix cream cheese and butter. Add milk, vanilla and powdered sugar. Beat until fluffy, ice cooled cake.
