DOUBLE PEANUT BUTTER COOKIES 
1 c. shortening
1 c. peanut butter
1 c. granulated sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
2 1/4 c. flour
2 tsp. baking soda
1/4 tsp. salt
1 c. chopped salted peanuts

Cream shortening with peanut butter and sugars. Beat in eggs and vanilla. Sift flour, soda and salt. Stir into creamed mixture. Stir in chopped peanuts. Form dough into 1 inch balls. Place on ungreased cookie sheet. Flatten slightly with tines of fork. Bake at 350 degrees for 10 minutes. Makes 6 dozen.
