ZUCCHINI-NUT LOAF 
3 eggs, well beaten
1 c. cooking oil
2 c. sugar
2 c. grated zucchini
2 tbsp. vanilla
3 c. plain flour
1 tsp. baking soda
1/4 tsp. baking powder
3 tsp. cinnamon
1 tsp. salt
1/4 c. chopped pecans

Combine first 5 ingredients. Sift together dry ingredients and add to first mixture. Stir in pecans. Pour into 2 greased loaf pans and bake 1 hour at 325 degrees.
