BACON, LETTUCE AND TOMATO SALAD | |
1/2 lb. bacon, cut into 1 inch pieces 1/3 c. mayonnaise 1/4 c. plain yogurt 2 tbsp. vegetable oil 1 tbsp. lemon juice 1/4 tsp. pepper 8 c. bite size lettuce (iceberg) 16 cherry tomatoes, halved 6 slices white or whole wheat bread, toasted and cut into cubes 1. Fry bacon until crisp and golden - transfer to paper towel using slotted spoon. 2. Combine mayonnaise, yogurt, oil, lemon juice and pepper in a small bowl; whisk until smooth. 3. Place the lettuce in large shallow salad bowl. Add the mayonnaise-yogurt dressing; toss until well blended. Mound cherry tomatoes in center of salad; surround with toasted bread cubes and bacon. |
