SCOTTISH SHORTBREAD 
1/2 lb. butter
1/2 c. sugar
3 c. flour

Mix butter and sugar. Add flour starting with 2 1/2 cups flour; then add 1/2 cup more if mixture is not too crumbly. Mixture will be thick, requiring much working with your hands. Then, using a pastry cloth, pat and work into a large rectangle. Work with hands carefully so mixture does not crumble. Cut into pieces. Sprinkle sugar on top. Bake at 175 degrees for 6-8 hours.
