TROUT BAKED IN CREAM 
4 whole rainbow trout, about 1 1/4 lbs., fresh or frozen
2 tbsp. lemon juice
1/4 tsp. white pepper
1/4 tsp. salt
1 pt. whipping cream
2 tbsp. fine dry bread crumbs

Wash and pat fish dry with paper towels. Brush inside and out with lemon juice. Sprinkle with salt and pepper. Place in lightly buttered baking dish. Pour cream over. Sprinkle with bread crumbs. Bake at 400 degrees for 15 minutes or until fish flakes easily with a fork. If fish is frozen, bake for 20-25 minutes.
