SWEET POTATO PIE 
2 c. sweet potatoes or yams, cooked, mashed
2 tbsp. butter, melted
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1/2 c. light brown sugar
2 eggs
2 c. milk

Mash the sweet potatoes so that it's free of lumps. Add melted butter, spices, salt and sugar. Beat eggs slightly. Add milk and combine with sweet potato mixture. Pour into a pastry lined pie plate and bake until firm, starting with a hot oven and reducing to moderate. Time in baking, 10 minutes at 450 degrees. 50 to 90 minutes at 325 degrees. You want to be able to stick a kitchen knife in the middle and pull it out clean. I often add 1/4 cup of a liqueur such as Cointreau or Kahlua for the flavor; the alcohol cooks out.
