SWEET POTATO PIE 
2 c. mashed, cooked or canned yams
2 tbsp. butter
3/4 c. sugar (if in syrup, use 1/2 c.)
1/2 tsp. each salt, cinnamon, ginger & allspice
2 eggs, slightly beaten
1 c. milk
2/3 c. evaporated milk
1 tsp. vanilla
1 plain pastry shell
3 tbsp. chopped pecans

Cook potatoes or heat canned potatoes in syrup until most of the liquid has evaporated. Beat potatoes with mixer. Thoroughly mix in butter, sugar, salt and spices. Add eggs, milk, and evaporated milk, also vanilla. Mix well. DO NOT SCRAPE STRINGY FIBERS FROM BEATERS. Pour into shell. Bake at 350 degrees for 45 to 50 minutes until set. You can add pecans to mix if desired. Great with whipped cream, what isn't.
